Your Go-to Summer Dessert : Mixed Berry Trifle Recipe 

With all the summer cookouts, kickbacks, picnics, Sunday dinners.. “Did I miss anything ?” You always want to make sure you have something to add to the celebration. Sure a bottle of wine is always a fool-proof option, but why not go the extra mile and bring a dessert?  Even if you don’t have time to bake something from scratch, semi-homemade is the next best thing and depending on the presentation people may never know. When asked to bring a dessert for my friend’s Fourth of July party, I was jet-lagged and had zero energy to bake anything from scratch. With little time and energy, I decided to make a berry trifle, with the help of pre-made pound cake, from the Whole Foods bakery, but to make myself feel better about it, I made the whipped cream from scratch. ( It’s the little things …)

Depending on how fancy you want to get, with the assembly, this dish takes no longer than 15 minutes to throw together, but me being the perfectionist that I am, it  probably took a good 20 to 25 minutes, as I wanted the perfect ratio of berries to cake showing through the trifle dish.

So if you’re in a pinch and you need a go-to dish for your next event, I suggest this mixed berry trifle, for the win!

PS. This was gone and all of 10 minutes so I’m sure your friends will love it too!

 

Mixed Berry Trifle Recipe

Ingredients: 

  • 1/4 tsp lemon extract (only if you want a little citrus flavor in your whipped cream)
  • 1/2 cup Powdered sugar
  • 1 1/2 tsp Vanilla extract, pure
  • 1 pound cake loaf sliced
  • 2 1/2 cups Heavy cream

Dish Needed: 

Instructions:

  1. Using a hand mixer or stand mixer with a whisk attachment, beat heavy cream, powdered sugar, vanilla and lemon extract until soft peaks form.

  2. In a large trifle dish, layer whipped cream, cake, and berries, in that order and repeat, until you reach the top of the dish. Top with berries and get as creative as you’d like!
