Netflix and Cook : Lamb Bolognese with Fresh Pasta & Master of None

In the midst of all of the holiday specials and Christmas Rom-Coms , I decided to take a break and binge watch the Netflix series, Master of None, starring Aziz Ansari. First of all, if you haven’t seen it, watch it, you won’t regret it. After watching all ten episodes back to back, I was inspired by Dev, the main character’s, affinity for pasta. Not to give too much away, but in one of the final episodes he decided to finally use the pasta maker, gifted to him by his girlfriend, to make his favorite, pasta carbonara.

 

 

Being somewhat of an impulsive cook, I decided to make fresh pasta for the dinner the next day. Since lamb is often eaten around the holidays I chose to make a Lamb Bolognese to compliment my pasta.

Lamb Bolognese Recipe

Ingredients:

  • 2 pounds of ground lamb
  • 2 carrots
  • 1 large yellow onion
  • 4-5 garlic cloves
  • 1 tablespoon of extra virgin olive oil
  • 1 1/2 cups of tomato paste
  • 3-4 fresh thyme sprigs
  • 2 cups of red wine
  • water

Directions:

  1. Roughly chop the carrots and onions. Place in a food processor, add garlic cloves and purée.
  2. Heat olive oil in a large wide pit  on medium high heat.
  3. Season vegetables with salt and sauté in the pot until soft and caramelized, about 10-15 minutes.
  4. Add ground lamb, add salt, and sauté until browned, another 10 minutes.
  5. Add tomato paste and stir until mixed well with other ingredients.
  6.  Add wine to deglaze the bottom of the pan.
  7. Add about 4 cups of water and fresh thyme.
  8. Simmer the sauce on low heat with the lid off. Check on it occasionally, stirring. When most of the water evaporates and the sauce becomes thick again, add more water, about 3-4 cups.
  9. Repeat this process of adding water and cooking down the sauce about half way through.
  10. The final consistency should be not to watery but not too thick either
  11. Top with fresh parmesan and Enjoy!
